About your question, “sassy” is commonly used to refer to women. In Spanish the most accurate translation I believe would be “descarada”, “atrevida”.
Here’s an example:
“Mind your manners young lady, I will not tolerate sassy students in my class.”
“Cheeky” is more commonly used with children and it means “travieso”. Somebody who’s “cheeky” is kind of playful or amusing and not necessarily disrespectful.
